Here is the perfect scone recipe used by afternoon tea specialists The English Cream Tea Company.
Ingredients
3 x cups plain flour
half tsp salt
2 x tsp bicarbonate of soda
quarter cup caster sugar
85 grams cold butter
284ml buttermilk
half cup sultanas
Baking Instructions (makes eight yummy scones)
Preheat oven to 200C / 395F and line a baking tray with non-stick paper.
Sift 3 cups of plain (all purpose) flour into a bowl or mixer along with half teaspoon of salt, 2 teaspoons of bicarbonate of soda and quarter cup of caster sugar.
Rub in 85 grams of cold butter until it resembles rough breadcrumbs, then add half a cup of saltanas. Mix in 284ml of buttermilk to form a dough.
Lightly flour your work surface and rolling pin and knead/roll the dough until smooth and 3cm high. Stamp out circles with a cutter.
Re-roll trimmings for more scones. Place them all apart on a baking tray and sprinkle flour lightly over the top of the scones for a rustic look.
Bake for about 15 minutes until risen and golden. Cool on a wire rack.
